How to make Dhokla in just 5 Minutes

Dhokla is world famous dish from Gujrat. It is mouthwatering and can be eaten for Dinner or Lunch and Breakfast or MainCourse or SideDish or Starter. Usually is usually it is made from Besan (chick pea flour) and rice and there are some of popular kind of dhoklas are KhattaDhokla, Khandhavi Dhokla, SandwichDhokla, CheeseDhokla RawaDhokla ToorDalDhokla, GreenPeasDhokla, MixedDalDhokla RasiaDhokla. It is also known as Khaman.


Dhokla
For making this instant Dhokla ingredients are:
  1. Besan (Gram Flour)     - 1 Cups 
  2. Semolina                     - 1 Table spoon
  3. Ginger Powder            - ½ tea Spoon
  4. Turmeric Powder        - ¼ Tea spoon    
  5. Salt                             - As Needed
  6. Curd                          - 2 Table Spoon
  7. Fruit Salt ( Eno )        - 1 Tea Spoon
  8. Green Chili                - 4 (medium size)
  9. Lemon                      - 2 Lemons
  10. Sugar                       - 2 Table Spoon Grams 
  11. Mustard Seeds          - ½ Tea Spoon
  12. Curry Leaf                 - 8
  13. Coriander Leafs         - 2 Table spoon
  14. Cooking Oil               - 1 Table spoon


Recipe /  Method

  1. Mix the Besan, Semolina, Salt, Turmeric Powder, Ginger Powder and curd in a mixing bowl.
  2. Make a smooth batter with adding water.
  3. Leave the batter for few minutes.
  4. Boil 2 cups of water in a wok or a pressure cooker.
  5. Grease a flat tray.
  6. When water stared boiling mix the Eno into the batter and mix it gently. (do not mix it too much)
  7. Shift the batter into the greased tray.
  8. Tap the tray before putting it into the steamer.
  9. Hot 1 table spoon of cooking oil into a pan.
  10. When oil is hot enough fry mustard seeds, curry leafs and green chilies.
  11. Add 1 cup water, lemon juice and sugar into this condiment.
  12. When Dhokla is cooked pour the condiment onto the Dhokla.


Serving suggestion
  1. Serve the Dhokla with Coconut Chatney, Coriander Chatney and Tomato catchup.

How to make Jalebi in 5 Minutes ( Engligh subtitles )

Jalebi is a deep fried sweet made from maida flour and then soaked in syrup. It is bright orange or yellow in colour and can be served warm or cold. It has a chewy texture with crystallized sugary exterior coating. The sugars get partly fermented which adds flavor to the dish. Jalebi is a melt-in-the-mouth snack item that can satisfy the taste buds of your loved ones

Ingredients
Jalebi
Maida 1⁄2 Cup (8 tbs)
Corn starch 1 Tablespoon
Turmeric powder 2 Pinch
Yogurt 1 Cup (16 tbs)
Saffron 2 Pinch
Rapid rise yeast 1 Teaspoon
Baking powder 1 Teaspoon
Sugar 1 Cup (16 tbs) (for sugar syrup)
Water 3⁄4 Cup (12 tbs) (for sugar syrup)

Directions 
To make regular traditional batter :
1. In a bowl mix 1 cup maida,  1 tablespoon cornstarch and 1 pinch turmeric powder and mix with yogurt.
2. Add water and mix to get a lump free batter.
3. Cover and allow it to ferment for 2 -24 hours.
4. Add the saffron powder baking powder and oil and mix well. To make instant batter:
5. Heat water to lukewarm temperature in the microwave.
6. Add and mix 1 tsp sugar and add rapid rise yeast and leave it aside to rise.
7. In a bowl add 1/2 cup maida and 1/2 tbsp corn starch and a pinch turmeric powder.
8. Crush saffron into powder and mix into the maida.
9. Add 1 tbsp yogurt and add yeast mixture
10. Cover it and let it rise for about 15-20 minutes.
11. Add little oil and water and mix to get smooth consistency. To make sugar syrup:
12. Mix sugar and water in a heavy bottomed pan and simmer till 1 thread consistency is attained.
13. Bring down the temperature of the sugar syrup once the consistency is attained.
14. Squeeze lime juice to prevent crystallization and mix saffron, rose syrup and cardamom powder.

To make jalebis : 
15. Make a small-needle sized hole in a ziplock bag and fill with the jalebi mixture.
16. Alternately fill a squeezing bottle with the mixture.
17. Heat oil in a deep fry pan and squeeze the jalebis.
18. Immerse in the sugar syrup for about 20 seconds and remove.

SERVING 
19. Serve over special occasions or Diwali and Holi.

Making a Egg Roll - Street food of India

#EggRoll... Very tasty and every one love to eat it. Because of its taste it is becoming very popular these days. It is healthy and takes less time to prepare. During the visit of #NewDelhi I enjoyed this #EggRoll. Whenever I eat #Eggroll, usually #StreetFood #vendors used pre baked #Chapatti or #LachaParatha but this guy make fresh #LachaParatha. First he roll thin dough, then fry it from both the sides, beat the egg and with salt, then he pore the egg mixture onto the hot plate. After then he set the #Paratha on to the vet egg.  Once the frying process has done he put #marinated #onions / #shallots and fried #cabbage and peas on to the middle of the #Patatha (upside egg). He used some Street #TomatoCatchup #ChiliSauce #mayonnaise and some other sauces. Then he rolled it and rap it into a #TissuePaper. All this nice, crispy, tastier and healthier #EggRoll. I enjoyed this #IndianStyleRoadSideMeal for just 40 cents / $ .40 . I had it in at #VikasMarg near #LaxmiNagar.
